Gastronomy is the art of preparing and serving rich or delicate and appetizing food, the cooking styles of particular regions, and the science of good eating.

Timoleon Diamantis, Greece’s Master Chef from Makrinitsa (one of the most famous Pelion’s villages), is the ideal host. Timoleon will help you to wade into the local gastronomy in a more modern approach.
At Karaiskos Farm you will have the opportunity to collect and learn more about the seasonal vegetables of our garden and how you can cook or preserve them, to smell the aromas of the precious Pelion herbs and experience a unique culinary experience next to an acclaimed chef.Enjoy this unique experiential culinary journey in the history of the Greek “mezes”, small dishes that were served in the famous “tsipouradika” (small taverns) in our region from 1922 until today.

Grilled pork or chicken pieces on a skewer, handmade pita bread, onion and tomato from the garden combinedwith Tzatzikiare the ingredients foroneofthe most famous Greek food.

Learn the secret tips of baking a good Souvlaki, make handmade pita bread, traditional tzatziki and Greek salad. We welcome our guests with a cup of hot mountain tea or homemade sour cheery juice. Souvlaki will be served on the table accompanied with sea-sonal salad and Greek beer.

Greek Pie: a tasty and healthy snack during the day

You will learn how to make-open phyllo dough by the traditional way for the pie, fill it with fresh vegetables and herbs collected straight from the farm’s garden and bake it in the wood oven.
Until the pie is going to be ready, we will prepare fluffy fried zucchini-balls and refreshing aromatic yogurt dip with herds from the garden.

Greek Traditional Moussaka

You will learn how to make Moussaka, one of the most famous Greek dishes. We will cook this special dish, which has the eggplant as a main ingredient, by simple steps and will bake it in the wood oven.
Until the moussaka is gone be ready, we will prepare "Strapatsada" the Greek omelet made by grated fresh tomatoes and eggs from our chicken coop, then we will teach you the secrets of Pelion’s olive bread.
We welcome our guests with a cup of hot mountain tea or sour cherry juice. Moussaka will be served on the table with seasonal salad and wine from the Greek vineyard. At the end of the class we say goodbye to our guests with small gifts and participation diploma.

Briam and Traditional Cheesebread

Learn how to cook with what the fertile land of Pelion produces. We will cook "Briam" (oven baked vegetables) with various seasonal vegetables gathered from the garden. Then we will knead the "Tiropsomo" (cheesebread), we’ll add feta cheese, herbs and we’ll bake it in the wood oven. In the end we shape and prepare fluffy fried tomato balls.

You will learn how to cook "Meatballs in tomato sauce with Greek pasta (Hilopites)".

Knead the meatballs, prepare fresh tomato sauce and traditional hilopites. Oregano and olive oil give the magic touch of flavor in our dish. Slow cooked feta cheese in the wood oven complete our menu.

Pelion Spetzofai and Traditional Zucchini Pie (Batzina)

We will cook traditional "Spetzofai". One of the most famous dish in Pelion which is cooked with homemade sausage and peppers in fresh grated tomato sauce. We set the table and complete our meal with traditional “Batzina”, an original zucchini pie from the region of Thessaly, and aromatic fried oregano balls.
We welcome our guests with a cup of hot mountain tea or homemade sour cherry juice. "Spetzofai" will be served on the table accompanied with seasonal salad and wine from Greek vineyard. At the end of the lesson, we say goodbye to our guests with small gifts and participation diploma.
